This is our first outing for Miami Spice this year, and we’re off to a great start! This was an excellent $60 per head dining experience in Wynwood. Photos are of the interior, some of the servings from the 12-course menu, and the Wynwood area immediately outside.
Lobster Tails
A delicious and simple recipe for preparing lobster tails.
Ingredients
Serves: 4
Prep time: 5 minutes › Cook: 10 minutes › Total: 15 minutes
- Four lobster tails
- 3 tablespoons non-salted butter, melted
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 lemon
Directions

Prepare each lobster tail:
- Cut top of lobster tail shell
- Pull back shell to expose meat
- Wedge fingers between bottom of shell and meat to separate
- Place 1/4 lemon under the meat to prop it up

Season the tails:
- Mix garlic powder, smoked paprika, half of salt, and pepper together
- Rub spice mixture into lobster tails

Initial basting:
- Baste half of the butter over lobster tails

Broil the tails:
- Place tails at half-way position of oven
- Broil for 10 minutes

Finish and serve:
- Add remaining salt to remaining butter
- Baste over tails
- Serve immediately
Honey Crackles
Also known as “Honey Joys” in some regions. A sweet treat popular in South Australia.
Ingredients
Serves: 12
Prep time: 5 minutes › Cook: 10 minutes
- 1 tablespoon honey
- 2 tablespoons butter
- 3 ounces sugar
- 5 ounces cornflakes
Directions
- Melt honey, butter, and sugar in a saucepan on low heat. Stir with a wooden spoon until sugar dissolves.
- Pour hot mixture into a large bowl with cornflakes. Mix quickly before mixture cools.
- Place 12 cupcake liners in a muffin baking tray.
- Evenly distribute the mixture into the cupcake liners using a spoon.
- Put into a warm oven at 250°F for five minutes.
